I discovered that if I was very careful to visualize an outline before taking each stitch and very careful about *exactly* where to put the needle to take each stitch (picky to the point of being ridiculous, probably) I could make smooth satin stitch with a clearly defined shape. Takes longer than some of the other embroidery stitches, but if you keep working on it, you will get the results you want.
